Baked Spiced Chicken with Goji Berries Coleslaw

I like big flavours and I cannot lie. If you love spice, you will love this smokin’ hot baked spiced chicken. What’s not to love – using aromatic spices like coriander, turmeric, chili powder, paprika and mustard powder? Packed with flavours! And a simple slaw with goji berries for a cool kick. Best part about making this chicken – zero prep peeps!

Level: Easy

(A)Baked spiced chicken:

8 to 10 chicken drumsticks

2 teaspoons of mustard powder

2 teaspoons of paprika

2 teaspoons of chili powder (optional if cooking for kids)

2 teaspoon of coriander

1 teaspoon of turmeric

Olive oil

Salt

Black pepper

(B)Coleslaw with goji berries:

1 medium purple cabbage, shredded/sliced

1 medium carrot, shredded/sliced

1 medium green apple, sliced

2 tablespoons of goji berries, soaked

2 tablespoons of organic mayo/Greek yoghurt

Preheat the oven to 420F. Rub all the spices on the chicken drumsticks with a bit of olive oil. Sprinkle with salt and pepper. Bake for 45 minutes or so, depending on the size of your chicken.

As for the slaw, combine and toss everything in a salad bowl. Enjoy!
