Ribbon Salad with Avocado & Nutty Dressing

You are not really living until you try this green monster dressing. This is the kinda clean yet naughty dressing we are all looking for to salsa with our usual boring oh-so-grassy salad. You can ab-saladly pair this with meat, fish, salad, chips, potatoes, toast or anything you can think of!

Tangy and slightly nutty, this salad dressing definitely has a character.

Level: Easy

Serves 22 carrots, peeled

2 cucumbers, peeled

1 yellow bell pepper, sliced

1 medium size tomato, roughly chopped

2 sprigs of coriander, to garnish

Basil leaves, to garnish

Salad dressing:

2 cloves of garlic

1 avocado, deseeded

A cup of coriander and parsley

2 small shallots

Olive oil

3 tablespoons of lime juice

1 pinch of seasalt

2 tablespoons of olive oil

1 green or yellow chili, deseeded (use yellow chili if you want a fiery spicy dressing)

1 cup of mixed pistachios and walnuts

Layer the salad ingredients on a plate. Set aside. Blend the dressing ingredients. Serve dressing on the side.
