I’ve always like the idea of just playfully assembling and piling fresh cool cucumbers, coriander together with slices of spiced grilled chicken, the sweet caramelized sautéed onions and bell peppers on my tortilla wrap because it is just so therapeutic and comforting! Aaannnnd, I like it messy and sloppy, stuffing my face with the char-grilled spiced chicken wrap and the yucky creamy Greek yogurt dripping all over is my wrap la carte.
Serves 3 – 4
2 skinless chicken breasts
2 teaspoons of ground cumin
2 teaspoons of ground coriander
2 teaspoons of turmeric
2 teaspoons of paprika
5 tablespoons of Greek yogurt
3 to 4 limes
1 cucumber, peeled
A bunch of fresh coriander
1 medium size red bell pepper, sliced
1 medium size yellow onion, sliced
Heat a griddle pan over a high heat. Rub the chicken with cumin, coriander, paprika, salt and pepper. Flatten the chicken and rub some olive oil before grilling. Marinade overnight if you want to. Grill for a few minutes on each side. Set aside to rest.
On another non-stick pan over medium high heat, sauté the sliced onions and bell pepper with a pinch of salt, for 3 minutes or until golden brown. Set aside.
Slice the chicken. Lightly toast the tortilla wraps.
Assemble everything on the wrap, roll it up together with the fresh coriander leaves, peeled cucumber and a spoonful of Greek yogurt. Oh, and a good squeeze of lime juice!
